This recipe doesn’t really need a flamboyant introduction: it’s exquisitely simple and a perfect guilt-free week-night pudding plan. Blistered nectarines, silky from their roasting, interrupted by the fresh pop of blueberries and the deep hum of the spiced honey. Not bad, not bad at all. Try with peaches, plums, bananas and even clementines.
Roasted nectarines with spiced honey and mascarpone
Serves 2 | Preparation time 5 minutes | Cooking time 5 minutes
What you will need
2 ripe nectarines (or peaches, figs, or bananas)
2 tsp muscovado sugar
1/2 tsp cinnamon
1/2 tsp vanilla extract
For the Spiced Honey
2 Tbsp honey
2-3 Tbsp orange or clementine juice
1/2 cinnamon quill
1 star anise
2 cloves
Mascarpone, for serving
Fresh mint, for serving
Fresh blueberries, for serving (optional)
What to do
1. Pre-heat your oven to the grill setting. Halve and de-stone the nectarines and lay them cut-side-up on a baking tray.
2. Mix together the sugar, cinnamon and vanilla in a small bowl and then sprinkle over the nectarines. Grill for five minutes, or until golden and the sugar starts to caramelize.
3. Meanwhile, add the spiced honey ingredients to a small pot, bring to a gentle simmer, remove the spices and set aside until serving.
4. Remove the nectarines, divide between two plates, top with the mascarpone, a few fresh mint leaves and a drizzle of the spiced honey.
