Its menu features locally sourced proteins, foraged herbs, ancient grains and preserved ingredients – a true celebration of South African flavours, seasons and craftsmanship.
Accepting the award, Chef Ryan Cole, Salsify’s co-owner and executive chef, acknowledged the years of dedication from his team:
‘Six years of sacrifice, six years of relentless pursuit of improvement – not to be better than anyone but to be the best versions of ourselves – and six years of empowerment and betterment and just trying to find our voice in the South African food scene. We stand for very few things – we stand for no bullshit, we stand for honesty, and we stand for flavour. But it takes an absolute village to pull it all together and put it on the plate.’
