Travel the world by plate with Gåte at Quoin Rock

Dazzling food design is a key element that sets award-winning Gåte’s gastronomy apart. This is perfectly illustrated in the restaurant’s newly launched Daytime Experience – a six-course set menu dubbed ‘A Journey around the World’.

Gåte’s adventurous new menu amplifies the delights of global cuisine and Quoin Rock’s intercontinental flair can be attributed to the Ukrainian Gaiduk family, who purchased the estate in 2012.

Recently Quoin Rock hosted a fun Molecular Gastronomy Masterclass and Tasting Journey and Getaway’s Gabrielle Jacobs rolled up her sleeves and got to try her hand at Gåte’s interpretation of an ‘ethical foie gras’. Gåte uses regular livers from ducks that haven’t been force-fed, and makes use of an aromatic foie gras essence imported from Spain. The yummy veggie alternative uses lentils, Gåte’s closest match yet to the texture of foie gras in the traditional French cuisine.

A dream workspace for any forward-thinking creator, the Gåte kitchen houses a centrefuge, walk-in fridges, Swiss pacojects, a glass freezer, Convotherm ovens, a Thermomix, tunnels for micro-herbs, and more – a well-equipped playground for any discerning chef!

The Daytime Experience was concocted by Head Chef Nicole Loubser and her experienced, albeit young, team of chefs. (The menu is the lighter alternative to the 14-course dinner menu.)

Molecular gastronomy is introduced into the menu, but it’s not the main focus. “We have selected 14 different countries and we’ve chosen what their specific flavours are and have incorporated South Africa with that. It’s very flexible, so we can mix and match countries,” commented Chef Nicole.

Chefs have been allowed free expression to inject a modern twist into classical cuisine. Attention has been paid to height, texture, colour and contrast, resulting in superb gourmet dishes paired with exquisite Quoin Rock wine.

  4. Austria – Lamb, cranberry and smoked cheese tuile (Namysto red Blend, 2015)
  5. Namibia – Game – Oryx meat with smoked Potato Purée and veggies (QR Shiras, 2015)
  6. Caribbean – Pina Colada dessert with coconut (Black Series MCC, 2013)
