Ingredients
6 organic free range eggs
1/2 tablespoon ghee
Half a log of goats cheese
Handful of spinach
Small handful of chopped chives
Method
Whisk the eggs with the chopped chives, a pinch of sea salt and a sprinkle of chilli powder. Heat the ghee on a low heat and add the spinach. Cook until it just starts to wilt. Pour in the eggs. Cook for a minute or two and then crumble over the goats cheese. Cover up with a lid and cook until the eggs are set.
