Ingredients:
3 tbsp butter
2 onions chopped
2 cups butternut chopped
1 Granny Smith apple
3 tbsp flour
1 to 2 tsp curry powder
Generous pinch of nutmeg
3 cups chicken stock
1 cups milk
Grated rind and juice of 1 orange
Pinch of pepper and salt Method: Saut onions in butter until soft. Add butternut and apple, cook gently for 3 to 5 minutes. Add flour, curry powder, nutmeg and blend. Add stock, milk and orange juice. Simmer slowly for 20 minutes until tender. Liquidise. Best cooked one day in advance. Enjoy!
