Boerewors has now been defined by a clearly defined set of regulations after the South African Government introduced a host of new regulations to the Agricultural Product Standard (APS) act.
In a government gazette published on 26 August, Minister Thoko Didiza introduced regulations that include various classes of raw processed meats and appropriate product names.
This comes after a crackdown from the Department of Agriculture, Land Reform and Rural Development to seize any vegan products with ‘meaty names’ such as vegan meatballs.
These regulations set out to distinguish between raw minced meat, burgers, bangers and grillers to name a few. According to the new regulations, Boerewors must have a minimum meat content of 90% and fat content of no more than 30%. Furthermore, cereal or starch, vinegar, herbs, salt, food additives and water are the only other ingredients allowed.
The gazette stipulates that raw boerewors must be ‘manufactured from the meat of a domesticated animal of the bovine, porcine, or caprine species, or from a mixture of two or more thereof’ and be ‘contained in an edible casing.’ Mechanically recovered meat is not allowed to be included in boerewors.
